I do not know if you are going but at this time you run like crazy, like I have my schedule filled with meetings one after another without stopping until night, when all I want is my bed. The worst thing is that I have always dreamed of having quiet time to cook and enjoy the Christmas spirit. I think that what happens at least in Chile is that we are meeting school year to Christmas, so that events are multiplied with four children even more.

But you still need to enjoy this time, I love to give and give love in some way. And that is why the blog got me so happy and I give what I like to do it is to cook, although I struggled to find time to give them my recipes lately and to be able to visit blogs, something I love to do.



This recipe I give you today I loved it, some time ago was not so happy with something out of my kitchen . Got a recipe to my email site Donna Hay , muffins Christmas and is fascinated to read the ingredients and incorporating seasonal fruit (cherries), a cupcake right to our season. I made several changes to change some the almond flour, I added ginger and changed for sour cream yogurt. Then I decorated with white chocolate ganache and crowned with a beautiful cherry (we had received as a gift).

Try this recipe as cupcakes are not only delicious but they look very pretty and festive (and are quick and easy to do).



CHERRY CUPCAKES TASTE OF CHRISTMAS
12 units

· 1 cup flour
· 1 cup finely ground almonds (almond flour)
· 2 teaspoons of powder baking
· 1 teaspoon cinnamon
· ; 1 teaspoon ground ginger
· ½ cup granulated sugar
· natural yogurt 170 g (1 pot)
· 2 eggs
· 3 tablespoons vegetable oil
· ¾ cup chopped dried sour cherries
· 1 cup chopped cherries (pitted)

Preheat oven to 200C.
Mix the flour, almonds, baking powder, cinnamon, ginger and sugar in a bowl.
In another bowl beat (by hand) the yogurt, eggs and oil. Add dry ingredients. Finally add the dried cherries and cherry games. Mix well.
Put capsules muffins baking in 12 individual molds, add the prepared mixture. Bake for 30 minutes or up to put a stick in the middle of cupcake comes out clean. Allow to cool. Garnish with white chocolate ganache and a cherry.




white chocolate ganache
· 300 gr chopped white chocolate
· 1 cup cream

Put the chocolate in a bowl. Boil the cream and once it is ready to empty the chocolate. Wait a few minutes and then stir until a homogeneous mixture, if they are not good chocolate melts it should be placed in a water bath. Wait the ganache is firm, then put in a sleeve to decorate their cupcakes.
