This dish I found in a magazine and I really liked a lot, is simple in design and very rich and digestive system.
The zarangollo is a typical dish from the kitchen which is made from Murcia eggs, onion, zucchini and often also with potatoes. All the ingredients to make this troubled part of the variety of plant products from Murcia. Dressing the zarangollo usual with some kind of herb or spice and serve hot or cold accompanied with some bread.
Ingredients:
1 / 2 kg.
onions 4 tbsp. olive oil
4 slices of fried bread (in my case I used toast)
Prepared
Wash and slice zucchini. Peel onions and cut them into pens.
Heat oil in a skillet and cook over low heat, courgettes and onions for about 20 minutes, just until tender.
Break the eggs into the pan, season and stir gently until fruit set but moist. Serve immediately with slices of fried bread.
